This creamy butter bean spread comes together in just five minutes. Blended with sesame oil, lemon juice, garlic and chilli flakes, it offers a spicy, savoury flavour. It's a versatile dip for toasted bread, grilled tortillas, or an assortment of vegetable sticks and crunchy snacks.

Spicy Butter Bean Dip

Ingredients

  • 400 g butter beans, drained
  • 1 tablespoon lemon juice
  • 1 tablespoon sesame oil
  • 1 pinch dried chili pepper flakes
  • 1 garlic clove
  • 1/4 cup parsley or 1/4 cup coriander
  • sea salt
  • fresh ground black pepper

Method

  1. Combine the butter beans, lemon juice, sesame oil, dried chilli flakes, garlic, herbs, sea salt and black pepper in a food processor and blend until smooth.
  2. Should the mixture appear too thick, incorporate a small amount of water or a little of the reserved bean liquid.
  3. Serve the butter bean paste spread on toasted bread or as a dip alongside grilled soft tortillas, vegetable crudités, breadsticks, crisps or tortilla chips.
