Spicy Broiled Shark Steaks
This recipe delivers a flavourful and speedy main course, perfect for a weeknight. Shark or swordfish steaks are marinated in a punchy blend of chilli sauce, fresh ginger, soy, and orange juice, then broiled until perfectly cooked. The entire process takes just over an hour, with most of that time being hands-off marinating. The result is tender, flaky fish with a deliciously spicy and aromatic glaze.
Ingredients
- 1 lb fresh shark steaks or 1 lb fresh swordfish steak
- 2 green onions, thinly sliced
- 2 tablespoons orange juice
- 2 tablespoons chili sauce
- 1 teaspoon dried basil, crushed
- 1 tablespoon finely chopped fresh gingerroot
- 1 tablespoon reduced-sodium soy sauce
- 5 -6 dashes hot chili oil
- nonstick spray coating
Method
- Rinse the fish steaks and pat them completely dry using paper towels.
- Slice the fish into individual portions suitable for serving.
- Prepare the marinade by mixing the sliced green onions, orange juice, chilli sauce, crushed dried basil, chopped gingerroot, soy sauce, and chilli oil in a shallow dish.
- Place the fish pieces into the marinade, turning them to ensure they are fully coated.
- Cover the dish and allow the fish to marinate at room temperature for 20 minutes.
- Coat the cold rack of a broiler pan with a nonstick cooking spray.
- Remove the fish from the marinade, ensuring you keep the leftover liquid for later.
- Arrange the marinated fish on the prepared broiler pan rack.
- Position the fish 4 inches from the heat source and broil for 5 minutes.
- Gently flip each piece of fish over using a wide spatula.
- Brush the turned fish with the reserved marinade.
- Return the fish to the broiler and cook for another 5-7 minutes, until it flakes easily with a fork.
