Spicy Broccoli Bruschetta Spread

Ingredients

  • 2 cups broccoli florets
  • 1/3 cup chopped onion
  • 1 garlic clove (chopped)
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons olive oil
  • 2 tablespoons parmesan cheese (grated)

Method

  1. Boil the broccoli florets in salted water for approximately 12 minutes, or until they become tender, then drain them thoroughly.
  2. Heat the olive oil in a small skillet and cook the chopped onion, garlic and crushed red pepper flakes for 10 minutes, until the onion is soft.
  3. Place the cooked broccoli, the onion mixture from the skillet and the grated Parmesan cheese into a food processor.
  4. Process the combined ingredients in the food processor until a smooth texture is achieved.
  5. Taste the spread and add salt according to your preference.
  6. Allow the spread to reach room temperature before serving.
  7. Spread the mixture onto toasted rounds of Italian bread to serve.
