Spicy Black Rice

Ingredients

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons salt
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 2 tablespoons vegetable oil
  • 2 cups chopped onions
  • 1/2 cup chopped celery
  • 2 bay leaves
  • 2 tablespoons chopped fresh ginger
  • 1 large portabella mushroom, sliced 1 inch long and 1/2 inch wide
  • 1/4 cup rice wine (or other, I use grape juice)
  • 2 tablespoons tamari
  • 1 cup raisins
  • 2 cups converted white rice
  • 4 cups chicken stock

Method

  1. Mix all the seasoning mix items together in a small bowl.
  2. In a heavy 4-quart pot, warm the oil until it just starts to smoke, which should take around 4 minutes.
  3. Add the chopped onions, celery, bay leaves, ginger, mushroom slices, and 2 tablespoons of the prepared seasoning mix to the pot.
  4. Cook this mixture, stirring often, until it turns a dark metallic shade and adheres to the pot base, approximately 6 to 8 minutes.
  5. Pour in the rice wine and tamari, using your spoon to scrape up any browned bits from the bottom.
  6. Mix in the raisins and rice, continuing to cook and stir now and then until the liquid is gone and the rice starts sticking, about 5 to 6 minutes.
  7. Add the chicken stock and give the pot bottom another good scrape.
  8. Stir through the rest of the seasoning mix.
  9. Put the lid on, bring everything to a boil, then lower the heat and let it simmer until the rice is tender, roughly 20 minutes.
  10. Take the pot off the heat, fluff the rice with a fork, cover it again, and allow it to rest for 5 minutes before you serve.
