Spicy Black Rice
This dish delivers an intense and satisfying flavour profile, combining aromatic spices with savoury mushrooms and sweet raisins. It's an exotic yet hearty side, perfect for a comforting meal. The recipe uses converted white rice simmered in chicken stock, resulting in a tender and fragrant final dish that serves seven people.
Ingredients
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons salt
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon cayenne
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground mace
- 1/2 teaspoon black pepper
- 1/2 teaspoon white pepper
- 2 tablespoons vegetable oil
- 2 cups chopped onions
- 1/2 cup chopped celery
- 2 bay leaves
- 2 tablespoons chopped fresh ginger
- 1 large portabella mushroom, sliced 1 inch long and 1/2 inch wide
- 1/4 cup rice wine (or other, I use grape juice)
- 2 tablespoons tamari
- 1 cup raisins
- 2 cups converted white rice
- 4 cups chicken stock
Method
- Mix all the seasoning mix items together in a small bowl.
- In a heavy 4-quart pot, warm the oil until it just starts to smoke, which should take around 4 minutes.
- Add the chopped onions, celery, bay leaves, ginger, mushroom slices, and 2 tablespoons of the prepared seasoning mix to the pot.
- Cook this mixture, stirring often, until it turns a dark metallic shade and adheres to the pot base, approximately 6 to 8 minutes.
- Pour in the rice wine and tamari, using your spoon to scrape up any browned bits from the bottom.
- Mix in the raisins and rice, continuing to cook and stir now and then until the liquid is gone and the rice starts sticking, about 5 to 6 minutes.
- Add the chicken stock and give the pot bottom another good scrape.
- Stir through the rest of the seasoning mix.
- Put the lid on, bring everything to a boil, then lower the heat and let it simmer until the rice is tender, roughly 20 minutes.
- Take the pot off the heat, fluff the rice with a fork, cover it again, and allow it to rest for 5 minutes before you serve.
