This colourful recipe for tomato rice comes from a cherished Italian cookbook. It combines chopped soft green and ripe tomatoes with onion and garlic, sautéed before being simmered with converted rice. The result is a fluffy, savoury side dish that serves six to eight people. Green and Red Tomato Rice

Ingredients

  • 1 tablespoon olive oil
  • 1 large soft green tomato, chopped
  • 1 large ripe tomatoes, chopped
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • salt & fresh ground pepper
  • 1 cup converted rice, washed

Method

  1. Pour the olive oil into a medium saucepan.
  2. Cook the chopped green tomato, ripe tomato, onion, and garlic in the pan until they become tender.
  3. Pour in 2 1/2 cups of water, season with salt and pepper, then cover the pan and bring the contents to a boil.
  4. Stir in the washed rice and replace the lid.
  5. Lower the heat and allow the rice to simmer for 15 minutes.
  6. Take the pan off the heat and leave it undisturbed until all the liquid is absorbed and the rice turns fluffy.
