Vegetable Confetti Rice

Ingredients

  • 2 cups water
  • 1 tablespoon butter
  • 1 teaspoon chicken flavor instant bouillon (or 1 cube)
  • 1 cup uncooked rice (I use basmati)
  • 1/2 cup shredded carrot
  • 1/2 cup sliced celery
  • 1 tablespoon finely chopped onion

Method

  1. Place the water, butter and bouillon into a medium saucepan and bring to a boil, stirring to ensure the bouillon dissolves completely.
  2. Add the rice, shredded carrot, sliced celery and chopped onion to the pan, stir well and bring the mixture back to a boil.
  3. Lower the heat, cover the saucepan and allow it to simmer for 20 minutes, or until the rice has become tender.
