Rice and Corn with Chipotle Peppers

Ingredients

  • 2 tablespoons butter
  • 1/2 cup diced red pepper
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 3 chipotle chiles, seeded and diced
  • 1 cup uncooked rice
  • 3 cups fresh corn kernels
  • 1 1/2 cups chicken stock or 1 1/2 cups water
  • 1/2 cup cream
  • salt and pepper
  • 1 scallion, sliced thin garnish
