Spicy Beef Goulash

Ingredients

  • 2 lbs sirloin beef
  • 6 slices bacon, chopped
  • 2 medium onions, sliced
  • 1 tablespoon paprika
  • 1/2 teaspoon crushed red pepper flakes (or adjust to taste)
  • salt & freshly ground black pepper (I use seasoned salt)
  • 4 garlic cloves, finely chopped
  • 1 large green pepper, chopped
  • 1 (19 ounce) can tomatoes
  • 2 tablespoons flour
  • 1 cup sour cream

Method

  1. Slice the beef into cubes of bite size.
  2. Cook the chopped bacon in a large skillet until browned, then take it out, let it cool a little and cut it into bigger pieces, keeping the fat in the pan.
  3. Place the sliced onions and chopped garlic into the same skillet and cook until they become soft.
  4. Stir the paprika and red pepper flakes into the onion and garlic mixture and cook for 30 seconds.
  5. Put the beef cubes into the pan along with all the remaining ingredients except the sour cream, put a lid on and cook for about 1-1/2 hours until the meat is tender, stirring frequently.
  6. Combine the flour with the sour cream just before you are ready to serve, then mix this into the goulash.
  7. Heat and stir the goulash for 1-2 minutes until everything is thoroughly incorporated, ensuring it does not come to a boil.
