This recipe creates spicy baked falafel patties served in whole wheat pita bread with homemade tzatziki. Ingredients

  • 2 (14 ounce) cans garbanzo beans, drained (chickpeas)
  • 1 medium yellow onion, finely chopped
  • 2 large garlic cloves, minced
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 tablespoon red chili pepper flakes, crushed
  • 1 teaspoon salt
  • 2 tablespoons flour
  • 1 tablespoon olive oil
  • 8 ounces Greek yogurt
  • 1 cucumber, peeled, seeded & finely chopped
  • 2 large garlic cloves, minced
  • 2 tablespoons dill (fresh or dried)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 4 whole wheat pita bread
  • 1 large tomatoes, sliced
  • 4 large lettuce leaves
  • red onion, slices and separated into rings

Method

  1. Set your oven to 350 degrees. Make the tzatziki by mixing the yogurt, minced garlic, chopped cucumber, dill, lemon juice and 1/2 teaspoon salt in a bowl. Once combined, cover it and place it in the fridge to chill while you work on the falafel.
  2. Take the drained chickpeas and mash them thoroughly in a large bowl. Stir in the finely chopped onion, 2 minced garlic cloves, parsley, cilantro, cumin, coriander, 1 teaspoon salt, red chili pepper flakes and the flour. Mix everything into a thick paste. Shape ping pong ball-sized amounts of the mixture, then press them gently into small discs.
  3. Cover a baking sheet with foil. Use the olive oil to lightly brush both sides of each falafel disc. Arrange them on the prepared sheet. Bake for about 15 minutes, turning them over once halfway through so they brown evenly.
  4. To build the sandwiches, place 2 to 3 falafel pieces inside each whole wheat pita pocket. Add slices of tomato, lettuce leaves and rings of red onion. Finish by drizzling a generous amount of the chilled tzatziki sauce over the filling before serving.
