This family recipe elevates store-bought gefilte fish to taste freshly made. The fish is gently simmered with sliced carrots, onion, and celery, then baked until lightly browned. It is served chilled with the reserved vegetables and traditional horseradish for a classic appetiser. The method is straightforward and yields a much-improved flavour from the original jarred product.

Ingredients

  • 2 (24 ounce) jars gefilte fish (any store bought brand)
  • extra virgin olive oil
  • 4 carrots (sliced crosswise)
  • 1 large onion (sliced thin)
  • 4 celery ribs (cut into small pieces)
  • ground black pepper

Method

  1. Add a small amount of olive oil to a pot and warm it.
  2. Cook the sliced onion until it just begins to take on colour.
  3. Introduce the fish pieces along with their gelatine, the carrots, celery, and black pepper as desired.
  4. Increase the heat to bring the contents to a boil, then lower it to maintain a simmer for 8 to 10 minutes before taking the pot off the heat.
  5. Carefully lift the fish pieces from the pot and let them cool on a platter.
  6. Set the cooked vegetables aside for later.
  7. Lightly coat a baking sheet with a little olive oil.
  8. Arrange the fish on the oiled sheet, turning each piece to coat both sides. Bake in an oven preheated to 350 degrees for 10 minutes.
  9. Flip the fish over and continue baking for a further 10 minutes, or until it achieves a light golden colour. Once done, refrigerate the fish. Serve it cold with the saved vegetables and horseradish.
