Fatoush Salad
This traditional Fatoush salad is a vibrant mix of diced cucumber, tomatoes, and red onion, combined with fresh parsley and radish. It is dressed with a simple blend of lemon juice, olive oil, and optional sumac for a tangy flavour. The salad is finished with pieces of fried or baked pita bread for a satisfying crunch. It is best served immediately to enjoy the crisp texture of the bread. This recipe serves three to four people.
Ingredients
- 1 cup seedless cucumber, diced
- 4 ripe tomatoes, diced
- 1 cup flat leaf parsley, chopped
- 1 red onion, finely chopped
- 1 garlic clove, minced
- 1/4 cup diced radish
- salt
- 1/2 cup lemon juice
- 1 tablespoon sumaq (optional)
- 3 tablespoons olive oil
- 2 pita breads, cut into small pieces and fried in olive oil until crisp drained on paper towels (alternatively, spritz with olive oil and bake until brown and crisp)
Method
- In a deep salad bowl, mix together all the listed ingredients, but leave out the prepared pita crisps.
- Gently toss the salad mixture and then scatter the pita crisps over the top.
- Serve the salad straight away to enjoy the pita pieces while they are still crisp.
