Persian Tomato and Cucumber Salad (Salad Shiraz)
This is a wonderfully light and fresh Persian salad, known as Salad Shiraz. It combines finely chopped cucumber, tomato and onion with parsley, lemon juice and olive oil. The flavours meld and intensify the longer it rests, and the dressing increases as it sits. It's a versatile side that complements a wide variety of meals. Ingredients
- 1 large cucumber
- 1 large tomatoes
- 1 large onion
- parsley
- salt
- 1/4 cup lemon juice (can be adjusted to your taste)
- 1 -2 tablespoon olive oil
Method
- Finely chop the tomato, cucumber and onion.
- Combine the chopped vegetables with the parsley, 1/4 cup of lemon juice and 1 -2 tablespoon of olive oil.
