Spicy Asian Cucumber Salad

Ingredients

  • 3 large cucumbers - sliced lengthwise, seeds scooped out, and cut into 1/2-inch thick half rounds
  • 2 teaspoons salt
  • 1 tablespoon soy sauce
  • 1 tablespoon white sugar
  • 3 cloves garlic, thinly sliced
  • 2 teaspoons rice vinegar
  • 1.5 teaspoons toasted sesame oil
  • 1 teaspoon hot chili oil
  • 0.5 teaspoon red pepper flakes

Method

  1. Put the cucumber pieces in a colander and scatter the salt over them. Let them stand to drain for at least 30 minutes. Discard any collected liquid but do not wash the cucumbers.
  2. While the cucumbers drain, prepare the dressing. In a bowl used for serving, combine the soy sauce, sugar, garlic slices, rice vinegar, toasted sesame oil, chilli oil, and red pepper flakes, whisking them together.
  3. Transfer the drained cucumbers into the bowl with the dressing and mix well until evenly coated. Place the salad in the refrigerator to chill thoroughly prior to serving.
