Bok Choy Ramen Salad

Ingredients

  • 0.5 cup canola oil
  • 0.5 cup white sugar
  • 0.25 cup red wine vinegar
  • 2 tablespoons soy sauce
  • 0.25 cup butter
  • 2 tablespoons white sugar
  • 2 (3 ounce) packages ramen noodles including flavor packet (such as Top Ramen®)
  • 0.5 cup sesame seeds
  • 3 ounces slivered almonds
  • 1 tablespoon soy sauce
  • 2 large heads bok choy, chopped
  • 6 green onions, chopped

Method

  1. Combine the canola oil, 1/2 cup sugar, red wine vinegar and 2 tablespoons of soy sauce by whisking them in a bowl.
  2. Melt the butter in a saucepan, then add 2 tablespoons sugar and stir to dissolve. Crumble the ramen noodles into the pan, then mix in the seasoning packets, sesame seeds, almonds and 1 tablespoon soy sauce. Cook for 2 to 3 minutes, stirring constantly, until everything is lightly toasted. Take the pan off the heat.
  3. In a large bowl, combine the prepared vinaigrette, the toasted ramen mixture, the chopped bok choy and the chopped green onions, tossing everything together to coat.
