Bok Choy Ramen Salad
This vibrant salad combines crisp chopped bok choy and green onions with a crunchy topping of toasted ramen noodles, sesame seeds and slivered almonds. Everything is brought together with a sweet soy vinaigrette, creating a textural and flavourful dish. It is an ideal choice for a speedy side, requiring only 15 minutes to prepare from start to finish. The recipe yields enough for six servings.
Ingredients
- 0.5 cup canola oil
- 0.5 cup white sugar
- 0.25 cup red wine vinegar
- 2 tablespoons soy sauce
- 0.25 cup butter
- 2 tablespoons white sugar
- 2 (3 ounce) packages ramen noodles including flavor packet (such as Top Ramen®)
- 0.5 cup sesame seeds
- 3 ounces slivered almonds
- 1 tablespoon soy sauce
- 2 large heads bok choy, chopped
- 6 green onions, chopped
Method
- Combine the canola oil, 1/2 cup sugar, red wine vinegar and 2 tablespoons of soy sauce by whisking them in a bowl.
- Melt the butter in a saucepan, then add 2 tablespoons sugar and stir to dissolve. Crumble the ramen noodles into the pan, then mix in the seasoning packets, sesame seeds, almonds and 1 tablespoon soy sauce. Cook for 2 to 3 minutes, stirring constantly, until everything is lightly toasted. Take the pan off the heat.
- In a large bowl, combine the prepared vinaigrette, the toasted ramen mixture, the chopped bok choy and the chopped green onions, tossing everything together to coat.
