This vibrant salad combines cold ramen noodles with shredded cabbage, sliced red pepper and diced chicken. It is all brought together with a sweet and savoury sesame dressing. For the best texture, keep the components separate and toss them with the dressing just before you serve. It takes about 15 minutes to prepare and serves eight people.

Asian Chicken Noodle Salad

Ingredients

  • 1 head small cabbage, shredded
  • 1 red bell pepper, thinly sliced
  • 4 (3 ounce) packages ramen noodles
  • 2 tablespoons vegetable oil
  • 4 tablespoons sesame seeds
  • 1 lb cooked diced chicken, cold
  • 3 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup rice vinegar
  • 1/4 cup sesame oil
  • 1 tablespoon soy sauce
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 1 garlic clove, minced
  • 5 green onions, chopped (top half tossed out)

Method

  1. Prepare the dressing by combining all ingredients, but leave out the cabbage, sesame seeds, vegetable oil and chicken.
  2. Break each ramen noodle block into four pieces, discarding the flavour sachets. Cook the noodles in boiling water for exactly 2 minutes. Drain them, rinse under cool water until cold, then toss with the vegetable oil while still in the colander.
  3. Just before you are ready to serve, mix together the shredded cabbage, sliced pepper, sesame seeds, prepared noodles, cold chicken and the dressing.
