Simple Crockpot Fiesta Chicken
This straightforward slow cooker dish combines chicken with salsa, corn and black beans for a flavourful, versatile meal. After cooking for 4 hours on high, the chicken is easily shredded. The resulting mixture is ideal for filling tortillas, topping salads or enjoying on its own. The cooking liquid can be reserved for preparing rice or other grains.
Ingredients
- 2 lbs chicken
- 1 (15 1/2 ounce) jar salsa
- 1 (12 ounce) can corn
- 1 (15 1/2 ounce) can black beans
Method
- Combine all the listed ingredients in your crockpot and cook for 4 hours on high.
- After cooking, use two forks to pull the chicken apart into shreds.
- You can strain the liquid from the pot to use for cooking rice, quinoa or dried beans.
