Ingredients

  • 2 extra large eggs
  • 1/4 cup progresso Italian style breadcrumbs
  • 1/4 cup parmesan cheese
  • 1/4 cup flat-leaf Italian parsley
  • 1 tablespoon oregano
  • 1/2 tablespoon salt
  • 1/4 tablespoon fresh ground black pepper
  • 2 tablespoons reduced sugar ketchup

Method

  1. Combine all the listed ingredients thoroughly in a large mixing bowl.
  2. Transfer the meat mixture into a suitable loaf tin.
  3. Bake the meatloaf in an oven preheated to 374 degrees for 1 hour.
  4. Check the loaf is done by inserting a meat thermometer, which should read 160 degrees.
