Low Carb Meatloaf
This low carb meatloaf combines lean ground beef with finely chopped onion, red pepper, and a blend of Italian herbs and Parmesan cheese. Bound with eggs and a small amount of breadcrumbs, it is baked until cooked through. The result is a moist, savoury loaf that is ideal for slicing and serving. Ingredients
- 1 lb lean ground beef
- 1/2 cup medium white onion
- 1/2 cup red bell pepper
- 1/4 cup rao's marinara sauce
- 2 extra large eggs
- 1/4 cup progresso Italian style breadcrumbs
- 1/4 cup parmesan cheese
- 1/4 cup flat-leaf Italian parsley
- 1 tablespoon oregano
- 1/2 tablespoon salt
- 1/4 tablespoon fresh ground black pepper
- 2 tablespoons reduced sugar ketchup
Method
- Combine all the listed ingredients thoroughly in a large mixing bowl.
- Transfer the meat mixture into a suitable loaf tin.
- Bake the meatloaf in an oven preheated to 374 degrees for 1 hour.
- Check the loaf is done by inserting a meat thermometer, which should read 160 degrees.
