Sea Scallops in Sweet Pepper Sauce

Ingredients

  • 1 1/2 lbs sea scallops
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3/4 cup finely chopped sweet pepper (red or yellow is pretty)
  • 1/2 cup chopped onion
  • 2 cloves garlic, chopped
  • 3 tablespoons dry white wine
  • 3/4 cup chicken broth
  • 1/2 cup milk
  • 1 tablespoon chopped fresh parsley

Method

  1. Melt the butter in a large skillet and cook the scallops for about 7 minutes until they turn golden brown.
  2. Take the scallops out of the pan and set them aside to keep warm.
  3. Place the chopped sweet pepper, onion and garlic into the same skillet.
  4. Cook these vegetables for 2 minutes.
  5. Pour in the white wine and stir the mixture for 1 minute.
  6. Add the chicken broth, milk and chopped fresh parsley to the skillet.
  7. Allow the liquid to come to a boil.
  8. Lower the heat and let the sauce simmer until it thickens, which will take 1-2 minutes.
  9. Return the scallops to the skillet and warm them through in the sauce.
