This European recipe features salmon fillets pan-seared and then baked with a delicious topping of sliced tomato, sun-dried tomato strips and mozzarella cheese. Salmon With Mozzarella

Ingredients

  • 600 g salmon fillets
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 -2 tomatoes
  • 4 sun-dried tomatoes packed in oil
  • 125 g mozzarella cheese

Method

  1. Set your oven to heat to 225°C.
  2. Take the skin and any bones off the salmon fillets.
  3. Cut the salmon into four portions and season all over with 3/4 teaspoon salt and 1/4 teaspoon black pepper.
  4. Slice the fresh tomato and the mozzarella cheese thinly.
  5. Slice the sun-dried tomatoes into thin strips.
  6. Melt 1 tablespoon of butter in a non-stick pan and cook the salmon pieces for 2-3 minutes on each side.
  7. Transfer the seared salmon to a dish suitable for the oven.
  8. Arrange the tomato slices, then the sun-dried tomato strips, and finally the mozzarella slices over each salmon piece.
  9. Add an extra sprinkle of black pepper over the top.
  10. Bake in the 225°C oven for approximately 5 minutes, until the mozzarella is fully melted.
