Salmon With Mozzarella
This European recipe features salmon fillets pan-seared and then baked with a delicious topping of sliced tomato, sun-dried tomato strips and mozzarella cheese. The dish is seasoned simply with salt and pepper and cooks in a total of 25 minutes, making it a swift yet elegant meal for four. The final bake melts the cheese beautifully over the fish.
Ingredients
- 600 g salmon fillets
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1 -2 tomatoes
- 4 sun-dried tomatoes packed in oil
- 125 g mozzarella cheese
Method
- Set your oven to heat to 225°C.
- Take the skin and any bones off the salmon fillets.
- Cut the salmon into four portions and season all over with 3/4 teaspoon salt and 1/4 teaspoon black pepper.
- Slice the fresh tomato and the mozzarella cheese thinly.
- Slice the sun-dried tomatoes into thin strips.
- Melt 1 tablespoon of butter in a non-stick pan and cook the salmon pieces for 2-3 minutes on each side.
- Transfer the seared salmon to a dish suitable for the oven.
- Arrange the tomato slices, then the sun-dried tomato strips, and finally the mozzarella slices over each salmon piece.
- Add an extra sprinkle of black pepper over the top.
- Bake in the 225°C oven for approximately 5 minutes, until the mozzarella is fully melted.
