Lemon Basil Shrimp
These tiger shrimp are marinated in a vibrant blend of lemon juice, fresh basil, garlic, and Dijon mustard before being grilled to perfection. The recipe is ideal for a barbecue or grill, offering a quick and flavourful seafood option. Serve the cooked prawns immediately with crusty bread to soak up the delicious buttery marinade. This dish makes enough marinade for more than 12 prawns, with marinating time additional to the 20-minute cook time.
Ingredients
- 12 -18 large tiger shrimp, peeled and de-veined (I leave the tail on)
- 1 tablespoon Dijon mustard
- 2 ounces melted butter
- 3 garlic cloves, crushed
- 2 tablespoons olive oil
- 2 -3 tablespoons freshly chopped basil leaves
- 1 lemon, juice of, depending how lemony you like it, a medium or large lemon
- salt
- white pepper
Method
- Combine all ingredients except the prawns in a shallow dish, mixing thoroughly. Taste the mixture to check if more mustard is needed.
- Add the prawns to the dish, tossing them to ensure they are fully coated in the marinade. Cover the dish and place it in the refrigerator for 1 hour.
- Take the prawns out of the marinade and thread them onto skewers for cooking.
- Grill the skewered prawns over medium coals for 2-3 minutes on each side. While cooking, occasionally baste them with the leftover marinade.
- Serve the cooked prawns straight away.
