Fresh Tomato & Basil Baked Fish
This recipe makes excellent use of garden-fresh tomatoes and any leftover tomato sauce. White fish fillets are seasoned, topped with a mixture of breadcrumbs, scallions, and basil, then finished with sliced tomatoes before baking. It's a quick and flavourful dish that serves three to four people and is ready in about 30 minutes.
Ingredients
- 1 lb white fish fillet (flounder, cod, halibut, or turbot will work well)
- 1/4-1/2 cup tomato sauce (great for leftover sauce!)
- 1/4 cup breadcrumbs
- 1/2 cup scallion, minced
- 1/2 fresh basil leaf, shredded
- 1 -2 fresh summer tomatoes, thinly sliced
- fish seasoning, to taste
- salt & freshly ground black pepper, to taste
Method
- Spread the tomato sauce across the base of a baking dish.
- Wash the fish fillets and then dry them thoroughly.
- Season both sides of the fish with salt and pepper, then place them in the prepared dish.
- For extra flavour, you can add a sprinkle of fish seasoning or flavoured salt to the fillets.
- Mince the scallions and shred the basil on a chopping board.
- Combine the breadcrumbs with the fresh herbs and give them a rough chop together.
- Cover the fish fillets with the herbed breadcrumb mix, then arrange the fresh tomato slices on top.
- Place in an oven preheated to 375 degrees and bake for 20 minutes, or until the fish is fully cooked.
