Roasted Pepper Chili

Ingredients

  • 1 lb ground turkey
  • 2 (14 ounce) cans stewed tomatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup chopped red onion
  • 1/2 cup coarsely chopped roasted red pepper
  • 1 small jalapeno, minced
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground allspice
  • salt and pepper

Method

  1. Brown the ground turkey in a skillet with a light coating of oil, breaking it apart with a fork as it cooks.
  2. Transfer the cooked turkey to a slow cooker and add all the other ingredients, omitting the salt and pepper for now.
  3. Put the lid on the slow cooker and leave it to cook for 6 to 8 hours.
  4. Once cooked, taste the chilli and add salt and black pepper as needed.
