Restaurant-Style White Queso Dip
This Tex-Mex appetiser delivers a rich, creamy white queso dip with the spicy tang of pickled jalapeños. It mimics the quality of a restaurant version but makes a far more generous portion for your money. The simple method involves melting cheese with half-and-half before stirring through the flavourings. It is ready to serve in about 15 minutes, yielding approximately 3 cups to feed a crowd.
Ingredients
- 1 pound white American cheese, cubed
- 0.75 cup half-and-half
- 0.25 cup diced pickled jalapeno peppers
- 1 teaspoon pickled jalapeno pepper juice
- 0.125 teaspoon ground cumin
- 0.125 teaspoon cayenne pepper
Method
- Place the cubed American cheese and half-and-half into a medium bowl that is safe for the microwave. Heat on high power for intervals of 1 1/2 minutes, stirring well after each interval, until the mixture is fully melted and creamy, which should take 5 to 7 minutes.
- Add the diced pickled jalapeños, the juice from the jalapeños, ground cumin, and cayenne pepper to the bowl. Stir to combine. Microwave the mixture again for 30 seconds. Give it a final stir and serve straight away.
