This popular Tex-Mex appetiser is built with five distinct layers for a colourful and flavourful result. It begins with a base of warm refried beans, followed by creamy guacamole and tangy sour cream. The dish is finished with a generous sprinkle of Cheddar cheese and fresh diced tomatoes. After assembly, it is chilled until cold, making it an ideal make-ahead party snack. The recipe serves six people and takes about 50 minutes to prepare in total.
Ingredients
- 1.5 cups refried beans
- 1.75 cups guacamole
- 1.5 cups sour cream
- 1 (8 ounce) package shredded Cheddar cheese
- 2 tomatoes, diced
Method
- Warm the refried beans in a microwave-safe bowl, heating them in the microwave and stirring often for about 3 minutes. Transfer the hot beans to a serving platter, spreading them into an even base. Place the platter in the refrigerator to cool the beans completely, which should take roughly 10 minutes.
- Create the next layer by spreading the guacamole evenly over the cooled beans. Follow this with a smooth layer of sour cream. Sprinkle the shredded Cheddar cheese over the sour cream, then finish by scattering the diced tomatoes on top.
- Cover the entire platter tightly with plastic wrap. Return it to the refrigerator to chill until the dip is thoroughly cold, approximately 30 minutes.
