Ranch Tuna Stuffed Tomatoes
This recipe creates a light and flavourful dish ideal for warm evenings. It combines tuna with kidney beans, sweetcorn, cheddar cheese and green onions, all bound together with a creamy ranch dressing. The mixture is chilled before being spooned into hollowed-out fresh tomatoes. The result is a cool, satisfying meal that requires minimal preparation and cooking time, making it a great choice for a quick supper.
Ingredients
- 1 (6 ounce) can solid white tuna, drained
- 1 (8 ounce) can kidney beans, rinsed and drained
- 1 (8 ounce) can corn, drained
- 4 ounces shredded cheddar cheese
- 2/3 cup bottled ranch dressing
- 1/4 cup chopped green onion
- 4 large fresh tomatoes
Method
- Mix all the listed components together, leaving out the tomatoes, then refrigerate for 1 hour.
- Remove the core from each tomato and use a spoon to hollow them out, discarding the seeds and pulp.
- Cut every tomato into 5-6 segments, being careful not to slice completely through the base.
- Carefully spread the wedges apart and fill the centre of each tomato with the prepared tuna salad.
