Ranch Tuna Stuffed Tomatoes

Ingredients

  • 1 (6 ounce) can solid white tuna, drained
  • 1 (8 ounce) can kidney beans, rinsed and drained
  • 1 (8 ounce) can corn, drained
  • 4 ounces shredded cheddar cheese
  • 2/3 cup bottled ranch dressing
  • 1/4 cup chopped green onion
  • 4 large fresh tomatoes

Method

  1. Mix all the listed components together, leaving out the tomatoes, then refrigerate for 1 hour.
  2. Remove the core from each tomato and use a spoon to hollow them out, discarding the seeds and pulp.
  3. Cut every tomato into 5-6 segments, being careful not to slice completely through the base.
  4. Carefully spread the wedges apart and fill the centre of each tomato with the prepared tuna salad.
