Pizza Meatloaf
This inventive meatloaf brings the taste of pizza to a family favourite. A mixture of ground beef, chopped pepperoni, pizza sauce, and diced vegetables is shaped and baked. It is then finished with more sauce, mozzarella cheese, and extra pepperoni before a final bake. The result is a hearty, flavourful dish that is perfect for a comforting dinner. Allow it to rest briefly before slicing and garnishing.
Ingredients
- 1/4 cup pepperoni slice, plus more for topping
- 1 1/2 lbs ground beef
- 1 (13 ounce) jar pizza sauce
- 1 cup Italian seasoned breadcrumbs
- 1 egg, beaten
- 1 small bell pepper, finely diced
- 1/2 yellow onion, finely diced
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- pepper
- 1 cup shredded mozzarella cheese
- red pepper flakes, for garnish
- chopped parsley, for garnish
Method
- Heat your oven to 375°F.
- Prepare an 8-inch springform pan by lining the base with parchment paper and coating it with nonstick spray. Encase the pan's exterior in aluminium foil and set it on a baking sheet.
- Roughly chop the pepperoni and place it in a large mixing bowl. Introduce the ground beef, 1 cup of the pizza sauce, breadcrumbs, beaten egg, diced bell pepper, onion, minced garlic, salt, and some pepper.
- Combine everything thoroughly, then press the mixture into the prepared pan.
- Use the rest of the pizza sauce to cover the surface of the meatloaf.
- Place in the oven to bake for 45 minutes.
- Take the pan out and scatter the shredded mozzarella and additional pepperoni slices over the top.
- Return to the oven for another 15 minutes, or until the cheese has fully melted.
- Allow the meatloaf to sit in the pan for 5 minutes before carefully releasing it from the springform.
- Finish with a sprinkle of red pepper flakes and chopped parsley for garnish.
