This inventive meatloaf brings the taste of pizza to a family favourite. A mixture of ground beef, chopped pepperoni, pizza sauce, and diced vegetables is shaped and baked. It is then finished with more sauce, mozzarella cheese, and extra pepperoni before a final bake. The result is a hearty, flavourful dish that is perfect for a comforting dinner. Pizza Meatloaf

Ingredients

  • 1/4 cup pepperoni slice, plus more for topping
  • 1 1/2 lbs ground beef
  • 1 (13 ounce) jar pizza sauce
  • 1 cup Italian seasoned breadcrumbs
  • 1 egg, beaten
  • 1 small bell pepper, finely diced
  • 1/2 yellow onion, finely diced
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • pepper
  • 1 cup shredded mozzarella cheese
  • red pepper flakes, for garnish
  • chopped parsley, for garnish

Method

  1. Heat your oven to 375°F.
  2. Prepare an 8-inch springform pan by lining the base with parchment paper and coating it with nonstick spray. Encase the pan's exterior in aluminium foil and set it on a baking sheet.
  3. Roughly chop the pepperoni and place it in a large mixing bowl. Introduce the ground beef, 1 cup of the pizza sauce, breadcrumbs, beaten egg, diced bell pepper, onion, minced garlic, salt, and some pepper.
  4. Combine everything thoroughly, then press the mixture into the prepared pan.
  5. Use the rest of the pizza sauce to cover the surface of the meatloaf.
  6. Place in the oven to bake for 45 minutes.
  7. Take the pan out and scatter the shredded mozzarella and additional pepperoni slices over the top.
  8. Return to the oven for another 15 minutes, or until the cheese has fully melted.
  9. Allow the meatloaf to sit in the pan for 5 minutes before carefully releasing it from the springform.
  10. Finish with a sprinkle of red pepper flakes and chopped parsley for garnish.
