Roasted Red Pepper Meatloaf
This recipe presents a novel way to prepare meatloaf by baking the seasoned beef mixture inside thick rounds of red pepper. The optional bread base becomes wonderfully crisp during cooking. Ingredients
- 1 lb ground beef
- 1/2 cup milk
- 1 egg
- 3/4 cup panko breadcrumbs
- 1 tablespoon Worcestershire sauce
- 1/2 cup onion, finely chopped
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 3/4 teaspoon dry mustard
- 1/2 teaspoon black pepper
- 1 cup ketchup
- 1 tablespoon brown sugar
- 3 large red peppers, sliced into eight 1 1/2 inch rounds
- 8 slices bread (optional, but totally worth it)
Method
- Heat your oven to 350 degrees.
- Combine the initial ten ingredients in a bowl using your hands.
- Separate the meat mixture into eight equal portions and press each firmly into a pepper round until fully filled.
- Spoon the ketchup topping over each stuffed pepper and position them on the bread slices.
- Transfer each assembly to a baking sheet and cook for 35-40 minutes, until the internal temperature reaches 160 degrees.
- Allow the meatloaves to rest for 10 minutes before serving.
