Norwegian Krumkake
This recipe guides you through creating authentic Norwegian krumkake, a delicate, cone-shaped wafer. Ingredients
- 1/2 cup butter, softened to room temperature
- 1/2 cup white sugar
- 3 eggs
- 1/2 cup flour
- 1/2 teaspoon vanilla
- 1/2 teaspoon freshly ground cardamom
- 6 tablespoons water
Method
- Combine the butter and sugar, creaming them together.
- Add the eggs individually, stirring after each addition.
- Mix in the flour thoroughly until well incorporated.
- Pour in the water gradually until the batter resembles a thick cream sauce.
- Apply a light coating of cooking spray or melted butter to both surfaces of the krumkake iron.
- Place the iron over a heat source until a water droplet sizzles upon contact.
- Place a heaped tablespoon of batter in the middle of the iron. Close the sides to spread the batter without letting it spill over.
- Cook for 30 seconds, then turn the iron over and cook for another 30 seconds.
- Return the iron to its starting position. Take out the krumkake and mould it over a cone or wooden spoon. Let it cool on a rack after removing it from the mould.
