Grønn Ertestuing - Norwegian Creamed Peas
This traditional Norwegian dish, known as Grønn Ertestuing, is a classic example of economical and comforting food. Dried peas are soaked and simmered until tender, then enriched with a simple butter and flour roux before being seasoned. The result is a creamy, savoury side dish that pairs wonderfully with meatballs or lutefisk. The recipe allows for the optional addition of a carrot for natural sweetness. It yields enough for 2 to 4 people.
Ingredients
- 2 cups dried peas
- 1 quart water
- 3 tablespoons butter
- 3 tablespoons flour
- 2 teaspoons salt (or more)
- 1 teaspoon sugar
Method
- Rinse the dried peas thoroughly, checking for any debris.
- Submerge the peas in a quart of water and leave to soak overnight somewhere cool.
- Simmer the peas in their soaking liquid for about 1 1/2 to 2 hours.
- Combine the butter and flour, then stir this mixture into the peas and cook for a further 10 minutes.
- Season the peas with 2 teaspoons of salt and 1 teaspoon of sugar, adjusting to your preference.
- As an optional step, you can include a peeled or diced carrot for the final 1/2 hour of cooking.
- Note that adding a carrot means the sugar can be omitted.
