Boiled Cod
This is a traditional Norwegian dish called Kokt Torsk. The cod is gently simmered in a seasoned broth to keep it tender and intact. It is then served on a platter, often accompanied by boiled potatoes and carrots. You can top the finished fish with a parsley and margarine mixture or a classic hollandaise sauce. The entire process takes about 20 minutes to complete for six servings.
Ingredients
- 2 -4 cups water
- 1 -2 tablespoon salt
- 1 teaspoon vinegar
- 1/2 teaspoon basil
- 3 lbs cod
Method
- Place the water, salt, vinegar and basil into a large kettle and bring the mixture to a boil.
- Put the cod into the boiling liquid.
- Lower the heat and allow the fish to simmer for 8 minutes.
- Ensure the liquid stays just under a boil so the fish does not break apart.
- Take the fish out of the water and transfer it to a platter for serving.
- Finish with a topping of chopped parsley in melted margarine, or use a hollandaise sauce.
- Accompany the dish with boiled potatoes and carrots.
