Cod Baked in Mayonnaise

Ingredients

  • 1 1/2 lbs cod fish fillets
  • 2 tablespoons chopped parsley
  • 1 onion, finely chopped
  • 10 tablespoons mayonnaise
  • salt and pepper
  • 3 tablespoons breadcrumbs

Method

  1. Rinse the cod fillets and pat them dry with kitchen paper.
  2. Arrange the fish in a buttered casserole dish and season generously with salt and pepper.
  3. Scatter the finely chopped onion and parsley evenly over the seasoned cod.
