Nif's Quick Raspberry Mint Jam

This quick jam is a wonderful way to use fresh raspberries and mint from the garden or kitchen. It requires no special equipment and cooks in just a few minutes, resulting in a vibrant, flavourful preserve. The mint adds a refreshing note that complements the sweet berries beautifully. It makes about 1 1/2 cups and is best stored in the refrigerator.

Nif's Quick Raspberry Mint Jam

Ingredients

  • 1 1/2 cups fresh raspberries
  • 1 1/4 cups sugar
  • 1 -2 tablespoon of fresh mint, chopped

Method

  1. Place the raspberries in a large pot and crush them using a potato masher.
  2. Bring the mashed berries to a boil, stirring continuously, and let it bubble for 1 minute.
  3. Stir in the sugar and return the mixture to a boil, cooking for 3 minutes while stirring.
  4. Take the pot off the heat and allow the jam to stand for 10 minutes.
  5. Mix in one tablespoon of the chopped fresh mint and let it cool for another 10 minutes.
  6. Sample the jam and incorporate more mint according to your taste preference.
  7. Transfer the finished jam into a container with a tight fitting lid and keep it refrigerated.
