Nif's Quick Raspberry Mint Jam
This quick jam is a wonderful way to use fresh raspberries and mint from the garden or kitchen. It requires no special equipment and cooks in just a few minutes, resulting in a vibrant, flavourful preserve. The mint adds a refreshing note that complements the sweet berries beautifully. It makes about 1 1/2 cups and is best stored in the refrigerator.
Ingredients
- 1 1/2 cups fresh raspberries
- 1 1/4 cups sugar
- 1 -2 tablespoon of fresh mint, chopped
Method
- Place the raspberries in a large pot and crush them using a potato masher.
- Bring the mashed berries to a boil, stirring continuously, and let it bubble for 1 minute.
- Stir in the sugar and return the mixture to a boil, cooking for 3 minutes while stirring.
- Take the pot off the heat and allow the jam to stand for 10 minutes.
- Mix in one tablespoon of the chopped fresh mint and let it cool for another 10 minutes.
- Sample the jam and incorporate more mint according to your taste preference.
- Transfer the finished jam into a container with a tight fitting lid and keep it refrigerated.
