Ingredients
- 1 cup cream cheese
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/4 cup confectioners' sugar
- 10 vanilla wafers
Method
- In a large mixing bowl or the bowl of a stand mixer, combine the milk, vanilla extract, and confectioners' sugar.
- Position the block of cream cheese in the centre of the bowl with the other ingredients.
- Mix using a hand mixer for 3 minutes until fully combined. If using a stand mixer, start on a low speed and gradually increase to 4, scraping the bowl once. Hand whisking will take about 10 minutes of vigorous effort.
- Crush the vanilla wafers into crumbs by hand, with a rolling pin, or in a food processor.
- Transfer the biscuit crumbs to a rectangular or circular container, preferably one with a lid.
- Pour the prepared cream cheese mixture over the layer of biscuit crumbs.
- Freeze the cheesecake for 10-20 minutes to allow it to set.
- Move it to the refrigerator or serve it immediately.
