Crispy Baked Basa
This recipe features basa, a freshwater catfish with a mild, delicate flavour. The fillets are coated in a crunchy mixture of ground almonds, cornmeal, and parmesan cheese, then baked until perfectly cooked. The result is a crispy, golden fish dish without a strong odour, finished with fresh parsley and lemon. It is an excellent egg-free main course, ready to serve in about 40 minutes.
Ingredients
- 1/2 cup almonds, ground and toasted
- 3 tablespoons cornmeal
- 2 tablespoons parmesan cheese
- 2 tablespoons chopped parsley
- 1 tablespoon flour
- 1/2 teaspoon lemon pepper
- 2 lbs basa fillets
- 2 tablespoons lemon juice

Method
- Mix the ground almonds, cornmeal, parmesan cheese, chopped parsley, flour, and lemon pepper together in a bowl.
- Brush each basa fillet with lemon juice, then press it into the almond mixture to coat all sides completely.
- Arrange the coated fillets on a baking tray and cook in an oven preheated to 400 degrees for 15-20 minutes, until the fish flakes easily.
- Finish with a sprinkle of fresh parsley and accompany with lemon wedges and tartare sauce.
