Ingredients
- 1 lb scallops, rinsed &chopped in 1/2 inch pieces
- 1 tablespoon onion, finely chopped
- 3 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 clove garlic, very finely minced
- 1 bay leaf
Method
- Melt the butter in a medium saucepan and cook the chopped onion until it softens.
- Stir the flour into the butter mixture, then slowly pour in the milk while stirring continuously.
- Keep cooking and stirring the mixture until it becomes thick and smooth.
- Introduce the salt, pepper, minced garlic, bay leaf, and chopped scallops to the saucepan.
- Allow the bisque to cook for 15 minutes over low heat.
- Take out the bay leaf before ladling the bisque into bowls for serving.
