Scallop Bisque

Ingredients

  • 1 lb scallops, rinsed &chopped in 1/2 inch pieces
  • 1 tablespoon onion, finely chopped
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, very finely minced
  • 1 bay leaf

Method

  1. Melt the butter in a medium saucepan and cook the chopped onion until it softens.
  2. Stir the flour into the butter mixture, then slowly pour in the milk while stirring continuously.
  3. Keep cooking and stirring the mixture until it becomes thick and smooth.
  4. Introduce the salt, pepper, minced garlic, bay leaf, and chopped scallops to the saucepan.
  5. Allow the bisque to cook for 15 minutes over low heat.
  6. Take out the bay leaf before ladling the bisque into bowls for serving.
