Carrabba's Spiedino Di Mare
This copycat recipe recreates the popular Carrabba's appetiser. Jumbo scallops and shrimp are seasoned, coated in Italian breadcrumbs, and grilled on skewers. The dish is finished with a melted lemon butter sauce poured directly over the seafood and a garnish of fresh parsley. It's designed to serve four as a starter or two as a main course and can be prepared in just 15 minutes.
Ingredients
- 4 scallops (size U-10 to U-20)
- 4 shrimp (size U-16 to U-20)
- 1/8 teaspoon kosher salt
- 1/8 teaspoon white pepper
- 2 tablespoons extra virgin olive oil
- 1/4 cup seasoned Italian breadcrumbs, for breading
- 2 ounces lemon butter
- fresh parsley, chopped
Method
- Soak bamboo skewers in water for 1/2 hour before you begin.
- Sprinkle the kosher salt and white pepper over the scallops and shrimp.
- Brush the seafood with olive oil, then roll it in the seasoned Italian breadcrumbs.
- Thread the coated seafood onto skewers and cook on the grill, turning once.
- Warm the lemon butter until it melts to serve alongside the grilled skewers.
- Finish the dish with a scattering of chopped fresh parsley.
