This copycat recipe recreates the popular Carrabba's appetiser. Jumbo scallops and shrimp are seasoned, coated in Italian breadcrumbs, and grilled on skewers. Ingredients

  • 4 scallops (size U-10 to U-20)
  • 4 shrimp (size U-16 to U-20)
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon white pepper
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup seasoned Italian breadcrumbs, for breading
  • 2 ounces lemon butter
  • fresh parsley, chopped

Method

  1. Soak bamboo skewers in water for 1/2 hour before you begin.
  2. Sprinkle the kosher salt and white pepper over the scallops and shrimp.
  3. Brush the seafood with olive oil, then roll it in the seasoned Italian breadcrumbs.
  4. Thread the coated seafood onto skewers and cook on the grill, turning once.
  5. Warm the lemon butter until it melts to serve alongside the grilled skewers.
  6. Finish the dish with a scattering of chopped fresh parsley.
