This traditional Caribbean jerk seasoning paste combines fiery scotch bonnet peppers with aromatic allspice, thyme and garlic. It creates a flavourful marinade ideal for basting pork or beef. The mixture comes together quickly in a blender and can be stored for later use. With just a handful of fresh ingredients, you can bring authentic island heat to your grilling in only 5 minutes.

Jerk Seasoning

Ingredients

  • 6 green onions, chopped fine
  • 3 scotch bonnet peppers, seeded and chopped
  • 2 garlic cloves, chopped
  • 2 tablespoons white wine vinegar
  • 1 tablespoon brown sugar
  • 3/4 tablespoon fresh ground allspice
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method

  1. Remove the seeds from the peppers and peel the garlic cloves.
  2. Place all the listed ingredients into a blender or food processor and blend until smooth.
  3. Transfer the finished paste into a container with a lid for storage.
  4. This seasoning is excellent for basting pork or beef during cooking.
