Jerk Seasoning
This traditional Caribbean jerk seasoning paste combines fiery scotch bonnet peppers with aromatic allspice, thyme and garlic. It creates a flavourful marinade ideal for basting pork or beef. The mixture comes together quickly in a blender and can be stored for later use. With just a handful of fresh ingredients, you can bring authentic island heat to your grilling in only 5 minutes.
Ingredients
- 6 green onions, chopped fine
- 3 scotch bonnet peppers, seeded and chopped
- 2 garlic cloves, chopped
- 2 tablespoons white wine vinegar
- 1 tablespoon brown sugar
- 3/4 tablespoon fresh ground allspice
- 1 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Method
- Remove the seeds from the peppers and peel the garlic cloves.
- Place all the listed ingredients into a blender or food processor and blend until smooth.
- Transfer the finished paste into a container with a lid for storage.
- This seasoning is excellent for basting pork or beef during cooking.
