Grilled Jamaican Jerk Chicken
This recipe guides you through preparing a classic Caribbean grilled chicken dish. The chicken breasts are marinated in a complex blend of spices, aromatics, and oil to create the signature jerk flavour. Ingredients
- 10 skinless chicken breasts
- 1/2 cup vegetable oil
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 2 teaspoons onion salt
- 2 teaspoons basil
- 2 teaspoons thyme
- 2 teaspoons vegetable seasoning
- 2 teaspoons crushed red pepper flakes
- 2 teaspoons cumin
- 2 teaspoons coriander
- 2 teaspoons ginger
- 2 teaspoons black pepper
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon allspice
- 1 teaspoon cayenne
- 1 teaspoon salt
- 1/4 cup sugar
- 1 onion, diced
- 1 green pepper, diced
Method
- Tenderise the chicken by pounding it.
- Combine the diced onion, diced green pepper, vegetable oil, sugar, and all the listed seasonings in a bowl with the chicken. Place this in the refrigerator for four hours or leave it overnight.
- Cook the marinated chicken on a grill until it is just done.
- Ensure you do not overcook the chicken.
- Serve the grilled chicken with a side of salsa, red chile sauce, pineapple-jicama relish, pineapple-chipotle salsa, or another sauce of your preference.
