Ingredients

  • 10 skinless chicken breasts
  • 1/2 cup vegetable oil
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion salt
  • 2 teaspoons basil
  • 2 teaspoons thyme
  • 2 teaspoons vegetable seasoning
  • 2 teaspoons crushed red pepper flakes
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 2 teaspoons ginger
  • 2 teaspoons black pepper
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon allspice
  • 1 teaspoon cayenne
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1 onion, diced
  • 1 green pepper, diced

Method

  1. Tenderise the chicken by pounding it.
  2. Combine the diced onion, diced green pepper, vegetable oil, sugar, and all the listed seasonings in a bowl with the chicken. Place this in the refrigerator for four hours or leave it overnight.
  3. Cook the marinated chicken on a grill until it is just done.
  4. Ensure you do not overcook the chicken.
  5. Serve the grilled chicken with a side of salsa, red chile sauce, pineapple-jicama relish, pineapple-chipotle salsa, or another sauce of your preference.
