Jerk Marinade

Ingredients

  • 3 green onions, chopped
  • 4 cloves garlic, chopped
  • 1 small onion, chopped
  • 4 habanero peppers, stemmed and seeded
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons salt
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh thyme
  • 2 teaspoons ground allspice
  • 3/4 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon

Method

  1. Combine all of the listed ingredients in a blender and process until a smooth consistency is achieved.
  2. Place the meat you wish to flavour into a resealable plastic bag, pour the marinade over it, and leave it to marinate in the refrigerator for 1 day.
