Jerk Marinade
This classic Caribbean jerk marinade combines aromatic green onions, garlic, and fiery habanero peppers with lime juice, soy sauce, and a warming blend of spices like allspice, nutmeg, and cinnamon. Blended until perfectly smooth, it creates a deeply flavourful paste ideal for coating and tenderising meat. For best results, allow your chosen protein to marinate in this mixture for a full day in the fridge before cooking.
Ingredients
- 3 green onions, chopped
- 4 cloves garlic, chopped
- 1 small onion, chopped
- 4 habanero peppers, stemmed and seeded
- 1/4 cup fresh lime juice
- 2 tablespoons soy sauce
- 3 tablespoons olive oil
- 1 1/2 tablespoons salt
- 1 tablespoon brown sugar
- 1 tablespoon fresh thyme
- 2 teaspoons ground allspice
- 3/4 teaspoon ground nutmeg
- 1/2 teaspoon cinnamon
Method
- Combine all of the listed ingredients in a blender and process until a smooth consistency is achieved.
- Place the meat you wish to flavour into a resealable plastic bag, pour the marinade over it, and leave it to marinate in the refrigerator for 1 day.
