Homemade Reese's Peanut Butter Cups
This recipe was born from a craving for the classic peanut butter and chocolate treat, offering a more affordable homemade version. With a simple mix of peanut butter, butter, sugars and melted chocolate, you can create your own mini cups. The process involves making a sweet peanut butter filling, layering it between chocolate, and setting it in the fridge. You'll end up with around 30 to 36 delightful homemade confections.
Ingredients
- 1 cup / 250g smooth peanut butter
- 60g / 4 tbsp unsalted butter
- 1/4 cup / 55g brown sugar
- 1 cup / 120g icing sugar (powdered sugar) (see notes)
- 500 g /16 oz chocolate (for melting, not eating chocolate)
Method
- Place paper patties into three 12-hole mini muffin tins.
- In a small saucepan, mix the peanut butter, butter and brown sugar. Warm the mixture, stirring continuously, until it melts and begins to bubble lightly. Take it off the heat and stir in the icing sugar gradually, adding 1/4 cup at a time, until fully combined.
- Allow the peanut butter mixture to cool down. you can chill it in the refrigerator to make this faster.
- Melt 250g of the chocolate using a microwave, heating it for 30 second intervals and stirring after each burst.
- Spoon approximately 1 1/2 to 2 tsp of the melted chocolate into every paper patty.
- Take a slightly heaped teaspoon of the cooled filling, form it into a ball and press it into a disc. Ensure this disc is smaller than the muffin cup so chocolate can surround it. Position one disc in the middle of each chocolate-filled cup. Continue with all the filling.
- Place the tins in the refrigerator for 20 minutes to let the chocolate layer firm up.
- Melt the other 250g of chocolate in the microwave, again using 30 second bursts and stirring between each.
- Spoon about 1 1/2 to 2 tsp of this melted chocolate over each peanut butter disc to cover it completely. Lightly tap the tin on your work surface to smooth the tops.
- Return the tins to the fridge for another 20 minutes until the chocolate is completely set.
- Peel away the paper patties and your peanut butter cups are ready to enjoy.
