Melting Moments
These are the genuine Melting Moments, distinct from versions using cornstarch. The recipe comes from a cookbook found in a town known as 'Little Sweden'. The cookies are baked until just golden, then sandwiched with a thick, sweet frosting flavoured with maraschino cherry juice. They are known for their delicate texture and are always popular.
Ingredients
- 1 cup butter (please don't substitute!)
- 2 cups flour
- 2 tablespoons powdered sugar
- 1/2 cup butter
- 2 tablespoons maraschino cherry juice
- 2 teaspoons milk
- 2 -3 cups powdered sugar, to make a thick frosting
Method
- Combine the butter, flour and powdered sugar.
- Shape the mixture into balls similar in size to ping pong balls.
- Arrange them on a cookie sheet and press down to flatten them to roughly 1/2 inch thick.
- Bake at 425* for a short time, just until the edges start to take on colour. Monitor them carefully. Once cooled, spread the icing on the flat side to make sandwich cookies.
- As an alternative, you can frost just the tops of the cookies to yield more. Almond extract with a little red colouring can be used instead of the cherry juice.
