Bread and Butter Pudding
This cherished recipe yields a comforting dessert that perfectly blends the textures of a traditional pudding with a smooth, baked custard. Ingredients
- 5 slices bread
- butter, to apply to the bread
- 2 cups milk
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla essence
- 1/2 cup raisins
- 1 cup hot water
- 1/2 teaspoon cinnamon
Method
- Heat your oven to 180°C.
- Place the raisins in a bowl and cover them with the hot water to soak.
- Spread butter on each slice of bread, then cut every slice diagonally.
- Lay the buttered bread triangles in a lightly greased or non-stick baking dish.
- Take a bowl and lightly beat the eggs inside it.
- In a separate pan, combine the milk and sugar and heat until it just begins to boil.
- Remove the pan from the heat as soon as it boils and stir in the vanilla essence.
- Gradually pour the hot milk mixture into the bowl with the beaten eggs.
- Keep stirring the mixture constantly until the egg is fully blended in and the custard starts to thicken.
- Scatter the soaked raisins over and between the arranged bread slices.
- Gently pour the prepared custard over the bread, then place the dish into the preheated oven.
- Bake the pudding for 25 mins or until a tester inserted comes out clean.
- Dust the baked pudding with cinnamon powder while it is still hot.
- This pudding is delicious served hot, warm or even cold.
