Hearty Winter Soup Mix in a Jar
This satisfying winter soup mix is assembled in a jar, making it a thoughtful homemade gift. The blend of dried red beans, lentils, split peas, navy beans and brown rice is simmered with a savoury seasoning packet. While the cooking process requires some time, the result is a deeply flavourful and hearty soup perfect for cold days. You can easily substitute other dried beans according to your preference.
Ingredients
- 1 cup small dried red beans
- 1/2 cup dried lentils
- 1/4 cup dried split peas
- 1/4 cup white dried navy beans
- 8 teaspoons chicken bouillon granules
- 1/3 cup instant minced onion
- 2 teaspoons dried basil
- 1 teaspoon pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground ginger
- 1 bay leaf
- 2/3 cup raw brown rice or 2/3 cup long-grain rice (***NO INSTANT***)
Method
- First, sort through all the dried beans and discard any that are unsuitable.
- Remember not to use instant rice for this recipe.
- For presenting the mix as a gift, layer the beans inside the jar and place the separate bags containing the rice and spices on top.
- Alternatively, you can prepare the components in separate bags.
- Combine the red beans, lentils, split peas and navy beans in one small plastic bag.
- In a second bag, mix together the chicken bouillon granules, instant minced onion, dried basil, pepper, cumin, garlic powder, ground ginger and the bay leaf.
- Place the raw brown or long-grain rice into a third small plastic bag.
- Attach the preparation instructions to the jar.
- To cook the soup, begin by rinsing the bean mixture and placing it in a large saucepan with 6 cups of water.
- Bring the water to a rolling boil and maintain it for 5 minutes.
- Take the pan off the heat source.
- Allow the beans to soak in the hot water for 30 minutes.
- Drain the water from the beans and return them to the saucepan.
- You may add ham at this stage if desired.
- Introduce the bag of seasonings to the pan along with 8 cups of fresh water.
- Bring the contents back to a boil.
- Cover the pan, lower the heat and let it simmer gently for 45 minutes.
- Stir in the rice and continue simmering until everything is tender: allow 45 minutes for brown rice, 25 minutes for parboiled rice, or 20 minutes for long-grain rice.
