This cherished family recipe for Christmas Snow Pudding comes from a grandmother who prepared it for large holiday gatherings. It features sherry soaked ladyfingers topped with a light, sweetened egg white and gelatin mousse, all covered in whipped cream. Each serving is finished with a rich homemade custard sauce and a maraschino cherry. The dessert requires about 35 minutes of preparation before chilling.

Christmas Snow Pudding

Ingredients

  • 24 ladyfingers
  • 1/2 cup sherry wine
  • 2 envelopes unflavored gelatin
  • 1 cup cold water
  • 12 egg whites
  • 1 cup sugar
  • 2 cups whipping cream, whipped
  • 1 tablespoon sugar
  • maraschino cherry

Method

  1. Slice the ladyfingers in half lengthwise, dip them into the sherry, and use them to line the base of two 9x13 inch shallow Pyrex dishes.
  2. Sprinkle the gelatin over the cold water in a small saucepan.
  3. Set the saucepan over a low heat for about 5 minutes to dissolve the gelatin.
  4. Stir the mixture constantly during this time.
  5. In a separate bowl, whip the egg whites until they form stiff peaks.
  6. While continuing to beat, gradually incorporate the sugar until the mixture is very stiff.
  7. Gently fold in the gelatin mixture once it has cooled a little.
  8. Spread this egg white mixture evenly over the layer of ladyfingers.
  9. Cover the dishes with plastic wrap and place them in the refrigerator to set.
  10. Once firm, cut the pudding into squares of your preferred size and arrange them on plates.
  11. Sweeten the whipped cream with the tablespoon of sugar.
  12. Use the sweetened cream to ice the top and sides of each individual square.
  13. Prepare the custard sauce by first beating the egg yolks and sugar together.
  14. Slowly pour the scalded milk into the egg yolk mixture while stirring.
  15. Transfer this mixture to a double boiler and cook it over simmering water until it thickens enough to coat the back of a spoon.
  16. Allow the custard to cool, then stir in the vanilla and dry sherry.
  17. Refrigerate the sauce until you are ready to serve the dessert.
  18. To serve, pour the custard sauce over each portion of pudding and top with a maraschino cherry.
