Christmas Snow Pudding
This cherished family recipe for Christmas Snow Pudding comes from a grandmother who prepared it for large holiday gatherings. It features sherry soaked ladyfingers topped with a light, sweetened egg white and gelatin mousse, all covered in whipped cream. Each serving is finished with a rich homemade custard sauce and a maraschino cherry. The dessert requires about 35 minutes of preparation before chilling.
Ingredients
- 24 ladyfingers
- 1/2 cup sherry wine
- 2 envelopes unflavored gelatin
- 1 cup cold water
- 12 egg whites
- 1 cup sugar
- 2 cups whipping cream, whipped
- 1 tablespoon sugar
- maraschino cherry
Method
- Slice the ladyfingers in half lengthwise, dip them into the sherry, and use them to line the base of two 9x13 inch shallow Pyrex dishes.
- Sprinkle the gelatin over the cold water in a small saucepan.
- Set the saucepan over a low heat for about 5 minutes to dissolve the gelatin.
- Stir the mixture constantly during this time.
- In a separate bowl, whip the egg whites until they form stiff peaks.
- While continuing to beat, gradually incorporate the sugar until the mixture is very stiff.
- Gently fold in the gelatin mixture once it has cooled a little.
- Spread this egg white mixture evenly over the layer of ladyfingers.
- Cover the dishes with plastic wrap and place them in the refrigerator to set.
- Once firm, cut the pudding into squares of your preferred size and arrange them on plates.
- Sweeten the whipped cream with the tablespoon of sugar.
- Use the sweetened cream to ice the top and sides of each individual square.
- Prepare the custard sauce by first beating the egg yolks and sugar together.
- Slowly pour the scalded milk into the egg yolk mixture while stirring.
- Transfer this mixture to a double boiler and cook it over simmering water until it thickens enough to coat the back of a spoon.
- Allow the custard to cool, then stir in the vanilla and dry sherry.
- Refrigerate the sauce until you are ready to serve the dessert.
- To serve, pour the custard sauce over each portion of pudding and top with a maraschino cherry.
