Garlic Bread Mini Pizzas
These clever mini pizzas use slices of bread as the base, brushed with a garlic butter mixture for that classic garlic bread taste. They are pressed into a muffin tin to form little cups, then filled with pizza sauce, diced vegetables, cheese, and pepperoni. Baked until the cheese is bubbly and the bread edges are crisp, they are perfect for sharing as party food. The recipe yields 12 individual servings and takes only 25 minutes from start to finish.
Ingredients
- 12 slices white sandwich bread (, fresh (Note 1))
- 2 tbsp butter
- 2 garlic cloves (, crushed)
- 1/8 tsp salt
- 1/2 cup pizza sauce ((Note 2))
- 1/4 cup red onion (, finely diced)
- 1/3 cup mushroom (, finely chopped)
- 3/4 cup grated cheese (, melting (I used a mix of mozzarella and tasty, equal amounts))
- 1/4 cup sliced small pepperoni ((Note 3))
Method
- Set your oven to heat to 180C/350F.
- Cut circles from each slice of bread using a large, clean can from tinned tomatoes (around 800g/28oz).
- Press each bread round into the hollows of a muffin tin to shape them.
- Combine the butter, crushed garlic, and salt in a mug or bowl safe for the microwave. Heat in 30 second bursts until the butter has fully melted.
- Use a brush to coat the inside of each bread cup with the melted garlic butter, making sure to include the garlic pieces.
- Spoon pizza sauce evenly into all the cups, then scatter over the finely diced red onion and chopped mushrooms.
- Sprinkle the grated cheese over the top, then finish with slices of small pepperoni.
- Bake in the oven for 10 to 15 minutes, until the cheese has melted and the bread rims are a golden colour.
- Enjoy these mini pizzas while they are still warm.
