Cheesy Jalapeno Bacon Stuffed Baguette
This is an excellent choice for entertaining. Prepare the stuffed baguette in advance and freeze it until needed, then simply bake before serving. The filling combines crispy bacon, cream cheese, cheddar, mozzarella, jalapenos and scallions. After stuffing, it is brushed with a simple garlic butter, sliced and baked until the bread is crisp and the cheese has melted. It yields 25 to 30 individual pieces. Serve it warm for the best results.
Ingredients
- 1/2 tbsp oil
- 8 oz / 250g bacon, diced (I used lean bacon)
- 1 x 20" / 50 cm baguette / french stick
- 8 oz / 250g Philadelphia cream cheese, softened (full or low fat)
- 1 cup cheddar cheese, shredded (Note 1)
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup packed jalapeños, finely chopped (if using fresh, deseed it. Or use canned, drained)
- 1 cup finely chopped scallions/shallots, green and white part (packed)
- Black pepper
- 3 tbsp butter
- 2 garlic cloves, minced
- Pinch of salt
Method
- Preheat your oven to 180C/350F.
- Warm the oil in a pan. Cook the diced bacon until it is lightly browned. Transfer it to a paper towel-lined plate to drain and allow it to cool.
- Trim the ends from the baguette and slice it into halves or quarters for easier handling.
- With a long knife, carefully hollow out the bread, ensuring you leave a wall about 1/2" / 1.5cm thick.
- In a bowl, combine the cooled bacon, softened cream cheese, shredded cheddar, mozzarella, chopped jalapeños, scallions and black pepper.
- Fill the hollowed baguette pieces with the mixture using a knife or a piping bag.
- To make the garlic butter, melt the butter with the minced garlic and a pinch of salt, either in the microwave or on the hob.
- Brush the exterior of the stuffed baguette with the prepared garlic butter.
- Cut the baguette into slices that are 1 1/4cm / 1/2" thick.
- Arrange the slices closely together on a large piece of foil.
- Wrap the foil around the baguette and bake for 15 to 20 minutes, until the bread is crusty and the cheese inside has melted.
- For the best flavour and texture, enjoy this dish while it is still warm.
