Crispy Chicken Livers on Garlic Potato Mash

Ingredients

  • 500 g potatoes, peeled and cubed
  • 3 garlic cloves
  • 25 g butter
  • salt and pepper
  • 1 cup fresh breadcrumb
  • 1 teaspoon oregano
  • salt and pepper
  • 400 g chicken livers
  • 1 egg, lightly beaten
  • 25 g butter
  • 3/4 cup orange juice
  • 1/2 teaspoon cumin, ground
  • 1/2 teaspoon ginger, ground
  • 1/2 teaspoon coriander, ground
  • salt and pepper

Method

  1. For the garlic mash, cook the cubed potatoes and peeled garlic cloves in boiling water until the potatoes are tender.
  2. Drain the potatoes and garlic thoroughly, then mash them together with 25 g of butter.
  3. Separate the mash into four or six equal parts and shape each into a cake.
  4. To prepare the livers, place the breadcrumbs in a shallow microwave-safe dish and microwave on HIGH for 2 - 3 minutes until they begin to crisp.
  5. Mix the oregano, salt, and pepper into the warmed breadcrumbs.
  6. Rinse the chicken livers and cut each one in half.
  7. Dry the liver pieces completely with kitchen paper.
  8. Coat each liver piece first in the lightly beaten egg, then in the seasoned breadcrumb mixture. In a large frying pan, melt 25 g of butter.
  9. Cook the coated livers in the pan for about 2 minutes on each side, until just cooked through. While they fry, make the sauce by combining the orange juice, cumin, ginger, coriander, salt, and pepper in a saucepan and bringing it to a boil.
  10. Reduce the sauce to a simmer and let it cook for 15 minutes.
  11. Warm the prepared potato cakes in a microwave or oven before serving.
  12. Position a potato cake in the middle of each of four or six plates.
  13. Arrange the crispy chicken livers on top of the potato cakes and spoon the orange sauce alongside to serve.
