Crispy Chicken Livers on Garlic Potato Mash
This recipe features chicken livers coated in seasoned breadcrumbs and pan-fried until crisp. They are served atop warm garlic mashed potato cakes, accompanied by a fragrant orange sauce infused with cumin, ginger, and coriander. The dish offers a wonderful combination of textures and flavours, making it an impressive yet straightforward meal to prepare. It yields enough for four to six people.
Ingredients
- 500 g potatoes, peeled and cubed
- 3 garlic cloves
- 25 g butter
- salt and pepper
- 1 cup fresh breadcrumb
- 1 teaspoon oregano
- salt and pepper
- 400 g chicken livers
- 1 egg, lightly beaten
- 25 g butter
- 3/4 cup orange juice
- 1/2 teaspoon cumin, ground
- 1/2 teaspoon ginger, ground
- 1/2 teaspoon coriander, ground
- salt and pepper
Method
- For the garlic mash, cook the cubed potatoes and peeled garlic cloves in boiling water until the potatoes are tender.
- Drain the potatoes and garlic thoroughly, then mash them together with 25 g of butter.
- Separate the mash into four or six equal parts and shape each into a cake.
- To prepare the livers, place the breadcrumbs in a shallow microwave-safe dish and microwave on HIGH for 2 - 3 minutes until they begin to crisp.
- Mix the oregano, salt, and pepper into the warmed breadcrumbs.
- Rinse the chicken livers and cut each one in half.
- Dry the liver pieces completely with kitchen paper.
- Coat each liver piece first in the lightly beaten egg, then in the seasoned breadcrumb mixture. In a large frying pan, melt 25 g of butter.
- Cook the coated livers in the pan for about 2 minutes on each side, until just cooked through. While they fry, make the sauce by combining the orange juice, cumin, ginger, coriander, salt, and pepper in a saucepan and bringing it to a boil.
- Reduce the sauce to a simmer and let it cook for 15 minutes.
- Warm the prepared potato cakes in a microwave or oven before serving.
- Position a potato cake in the middle of each of four or six plates.
- Arrange the crispy chicken livers on top of the potato cakes and spoon the orange sauce alongside to serve.
