Creamy Gourmet Chicken Liver
This recipe creates a luxurious and creamy chicken liver dish. The livers are first browned in butter, then combined with sautéed vegetables and a smooth, thickened broth flavoured with bay leaf and clove. After simmering, the result is a deeply savoury and comforting main course, ideal for serving over a bed of rice or noodles. The entire process takes about 30 minutes to complete.
Ingredients
- 1 lb chicken liver
- 1/3 cup butter
- 1 (4 ounce) can mushrooms, drained or 4 ounces fresh mushrooms, sliced
- 1 small green pepper, julienned
- 1 small onion, thinly sliced
- 3 tablespoons flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups chicken broth
- 1 bay leaf
- 1/4 teaspoon clove
- 2 tablespoons minced parsley
Method
- Brown the chicken livers on all sides using half of the butter, then take them out of the pan.
- Place the rest of the butter into the same skillet and cook the sliced onion, mushrooms, and julienned green pepper for 5 minutes.
- Mix the flour, salt, and pepper into the vegetables.
- Pour in the chicken broth, stirring continuously until the sauce becomes thick and smooth.
- Add the bay leaf, cloves, and the browned chicken livers to the pan. Cover it and let everything simmer for 15 minutes, then discard the bay leaf and cloves.
- Serve the finished dish alongside rice or noodles.
