Chicken and Pepper Trio
This vibrant dish combines strips of chicken breast with a trio of colourful bell peppers and fresh spinach. The chicken is first marinated, then grilled alongside the peppers before being tossed with the spinach and a zesty Italian dressing. It's a quick and healthy meal, perfect for a weeknight dinner, and yields six portions.
Ingredients
- 1 lb boneless skinless chicken breast, cut into 1/2 inch strips
- 3/4 cup reduced-fat Italian salad dressing, divided
- 6 medium bell peppers, cut into thin strips (2 red, 2 green, 2 yellow)
- 1 (10 ounce) package fresh spinach, washed and trimmed
Method
- Put the chicken strips into an 8 inch square baking dish and pour over 1/2 C of the Italian dressing, mixing to coat. Cover the dish and let it marinate in the refrigerator for 1 hour.
- Get a large grill pan very hot. Take the chicken from the marinade, letting the excess drip away, and cook it in the pan for 2-3 minutes on each side until fully cooked. Transfer the chicken to a plate. Add the pepper strips to the same pan and cook them for 4-5 minutes, stirring now and then, until they are tender but still have a slight bite.
- Put the cooked chicken back into the pan with the peppers to warm through. Place the fresh spinach in a large bowl. Add the warm chicken and pepper mixture along with the remaining 1/4 cup of Italian dressing. Toss everything together thoroughly and serve straight away.
