Cheesy New Orleans Shrimp Dip
This rich dip combines sautéed onions, garlic, bacon, and chopped shrimp with Monterey Jack cheese and a hint of spice. Prepared in a slow cooker, it melts into a creamy, shareable spread ideal for serving with chips. The recipe yields approximately 3 1/2 cups.
Ingredients
- 1 slice bacon
- 3 medium onions, chopped
- 1 garlic clove, minced
- 4 jumbo shrimp, peeled and deveined
- 1 medium tomatoes, peeled and chopped
- 3 cups monterey jack cheese, shredded
- 4 drops Tabasco sauce
- 1/8 teaspoon cayenne pepper
- 1 dash black pepper
- chips (for serving)
Method
- Fry the bacon slice until it becomes crisp, then drain and crumble it.
- In the rendered bacon fat, sauté the chopped onions and minced garlic, then drain them on a paper towel.
- Take the peeled shrimp and chop them coarsely.
- Place all the prepared ingredients, except the serving chips, into a slow cooker.
- Put the lid on the cooker and set it to Low for 1 hour, until the cheese has fully melted.
- If the mixture becomes overly thick, you can thin it with a little milk.
- Offer the warm dip alongside chips for dipping.
